Peanut Butter Popsicles

Beat the heat this summer with these Peanut Butter Popsicles, super easy to make and super delicious too!

These peanut butter popsicles are like eating a delicious nutty smoothie, perfect way to cool down this summer! Or if you want to brave it this winter too!

Believe it or not but it has taken me YEARS to start liking peanut butter and I’m so glad I like baking with it now, it definitely adds such a delicious flavour to things. I love pairing it with chocolate, or in smoothies or in popsicles!

I got my hands on a popsicle mold for Christmas (thank you mum and dad!) and I’m seriously looking forward to creating some more flavours. Or even better, I should try and recreate some of my childhood popsicle flavours!

To make these, all you need are 4 basic ingredients and a food processor/blender and a popsicle mold! Super easy for summer. The mold I own has about 4 cavities so this recipe would easily suit a mold of similar size or one that has 5 or 6 cavities. Any leftover mixture? Just drink it like a smoothie.

Another thing that has helped me beat the heat in the summer are smoothies. These remind me of a nice creamy smoothie, and the addition of dates give it a perfect caramel flavour. Who wouldn’t love peanut butter and caramel?

Peanut Butter Popsicles

An easy 4 ingredient recipe that is vegan friendly!

Equipment

  • Blender/Food Processor
  • Popsicle Molds (4-6 cavities)

Ingredients

Peanut Butter Popsicles

  • 1 cup frozen banana coins heaped
  • 1/2 cup almond milk
  • 1/3 cup smooth peanut butter
  • 1/3 cup dates soaked

Optional Chocolate topping

  • 1/2 cup dark chocolate chips
  • 1 tbsp coconut oil

Instructions

  • Combine the peanut butter popsicle mixture in a food processor or blender until smooth. Taste and adjust if needed.
  •  Pour mixture into popsicle moulds, add stick and place in freezer until set.
  • Once set remove from moulds and eat!
  • OPTIONAL: Once removed from moulds – melt the dark chocolate chips and coconut oil. Dip the tip of the popsicles into the chocolate mixture and place in freezer to set chocolate. Once set, EAT!
