It feels like it’s been a while since I’ve introduced myself around here and feels like it’s been a while since I’ve posted anything too! 😥
Luckily the holidays are soon upon me so I’m itching to get back into the kitchen again and create some content - my uni and teaching meals don’t really cut it for the gram sorry to say 😂
But in the mean time here’s a little glimpse of my weekend away in Queenstown, I hope you all had an enjoyable weekend, filled with lots of delicious food and happy memories 💗🐰

Can we talk about how stunning these pink oyster mushrooms are, and even more crazy is that I grew them myself from my @goodvibesfungi box! 
If you’ve been keeping an eye on my stories you would have seen these babies grow, and boy do they grow FAST! 🍄
When it finally came to harvesting and cooking them, I coated them in an egg wash and tossed them in almond meal and Italian herbs, made for a tasty addition to a wrap 🌯
Got a big and busy week ahead this week with my first ever week on practicum placement, which means I’m officially a student teacher for the next several weeks ahead 👩🏻‍🏫

RECIPE: Crunchy Peanut Butter Blondie ⬇️⬇️ RECIPE: Crunchy Peanut Butter Blondie ⬇️⬇️
AD• Crunchy peanut butter paired with chocolate is sure to be a hit with anyone, this blondie is made with the goodness of @nutbrothers Super Crunch peanut butter!
You wouldn’t even believe the secret ingredient is chickpeas 😱

INGREDIENTS 
1x 400g tin of chickpeas drained and rinsed
1/3 cup maple syrup
1/2 cup Super Crunch Peanut Butter
1/2 cup chocolate chips
2 tbsp melted coconut oil
1/4 cup coconut sugar
2 tsp vanilla essence 
1/4 tsp baking powder
1/4 tsp baking soda

METHOD:
1. Preheat oven to 175 degrees Celsius and like a square baking tin with baking paper
2. In a good processor, add all ingredients (except chocolate chips) and blend until smooth. Stir through chocolate chips. 
3. Place mixture into the tin and cook for 22-25 minutes or until golden and cooked through. 
4. Let it cool before cutting.

This is one fudgy sweet potato brownie that is sure to leave you drooling over these delicious photos 🤤
And it’s topped with a delicious chocolate and peanut butter frosting, too good ✌🏻
I personally don’t find it too sweet despite the fact it does have dates in it, plus the saltiness of the peanut butter balances out the dates. SWIPE/SAVE for recipe ➡️➡️
Pro tip: ADD CHOCCY MILK TO YOUR OVERNIGHT OATS 🍫
If you’re an overnight oats fan like I am, do yourself a favour and add some @thecollectivenz plant based chocolate milk instead of almond milk! You can thank me later 🤤
While I don’t have an exact recipe, I used rolled oats, chocolate milk (I added a few tbsp of almond milk too) 1 tsp cacao powder, 1 tsp vanilla essence and a scoop of @twoislandsco chocolate protein powder and a sprinkle of cacao nibs.
Overnight oats have been a uni staple for me lately, so quick and convenient to make the night before 🍫

Speaking of baking and lockdown, what’s your go to lockdown baking?
For me it’s always tricky things like macrons, dacquoise, croissants and today - pain au chocolat. I have no idea why I lean towards French pastries during lockdowns but I just do! 🥐🇫🇷

A crunchy peanut butter slice, made with the goodness of @twoislandsco peanut butter protein powder, @nutbrothers peanut butter and some crunchy puffed quinoa and buckwheat pieces 💗
*Add 2-3 tbsp of maple syrup to the slice mixture*
And of course, it’s not a slice without a crunchy chocolate topping - too good 🥜

I opted for a pita bread, smeared with tzatziki, Greek salad and falafel 🥙🧆
